So I thought I would start a tradition with some great recipes once a week as well. I need to expand my cooking abilities anyways. Yes, I am still doing Biggest Loser Challenge. But the problem isn't the food, it's what I DO with the food, right? So here is to enjoying in moderation.

Now if you have ever been to Weight Watchers you may already know this trick, but here I am to share it with you. I had the supplies for a while but just got around to making it this last week. I am calling them

Lightened Up Pumpkin Spice Muffins. 
You can obviously make them as a cake as well, but I found them great for breakfast.

The ingredients you will need are:
  • Spice Cake Mix (I have also tried chocolate, I think any will do depending on what you like)
  • small can of pumkin
  • 1-2 containers of unsweetened apple sauce
The trick is: you don't use oil or eggs as the mix requires. 
You use the other ingredients I listed instead! Make sure to read the TIP below about the texture issues you might encounter!

Directions:
Combing cake mix, pumpkin and apple sauce in a bowl
Mix
Pour
Bake for 30 min (don't mind the cake's instructions, they need a bit longer because we are using different ingredients!)

It's that EASY!

TIP: I used 2 apple sauce and one can of pumpkin, but I suggest using only 1/2 can of pumpkin. They come out a little gooey. If this happens leave them out, uncovered, and they will dry out to the right texture.
